Description
Originating in North Africa, shakshuka is traditionally, a one-skillet recipe of eggs baked in a tomato-red pepper sauce spiced with cumin, paprika and cayenne. The sauce, which comes together fairly quickly on the stovetop, is where the eggs are gently cracked and then simmered until just cooked and then served with some form of toasted bread, pita or challah for dipping. This version strays from more traditional renditions by adding fresh ginger and swiss chard to our local eggs. Finishing it with crumbled goat cheese at the very end creates little pockets of creamy flavor that melt in your mouth! Who said breakfast had to be boring?
