Description
Lentils can often be a mystery to meat-eaters but they can be so delicious (not to mention nutritious) when presented in salad form. We simmer French lentils until tender and combine with red wine vinaigrette, sun-dried tomatoes, sweet potato and spinach for a shining example of how to spruce up a simple legume. But we don’t leave the carnivores out because this salad is also the perfect base for perfectly pan-seared pork chops!
