Paleo Beef Enchiladas

A fun twist on the classic, we take fajita-seasoned beef, sweet potatoes and sautéed peppers and onion and roll them up in Swiss chard leaves before baking in a garlicky tomato sauce for a delicious paleo alternative to Taco Tuesday!
