This may just be our favorite way to cook eggs! We poach local eggs in a flavorful tomato sauce (so the yolk is still nice and runny as the white firms up) before adding marinated mozzarella cheese, fresh basil and of course, crispy ciabatta toasts for soaking up every last drop of the deliciousness! Perfect for breakfast, lunch or dinner!
