Egg and Cheese Breakfast Sandwich

If you’re looking for a simple + tasty breakfast that you can make in minutes this breakfast sandwich is for you. This became my go-to breakfast while renovating my kitchen as everything can be made using a microwave + toaster and clean-up is minimal.

We start with a toasted English muffin that’s topped with scrambled eggs, American cheese, spinach and (optional) hot sauce. If you’re taking it on the go simply wrap it in foil for easy transport!
