Description
Tapenade is a Provençal delicacy consisting of puréed or finely chopped olives, capers, anchovies and olive oil. Its name comes from the Provençal word for capers, “tapenas.” For our version, we swap capers out for sweet sun-dried tomatoes (and omit anchovies) while adding fresh basil and lemon to brighten things up. We then serve over roasted sweet potato rounds and pan-roasted chicken breasts for a dish that’s big on flavors but light on your stomach!
