Although it may be unfamiliar to most western diners, tempeh is a vegetarian soy food that has been eaten in Asia (particularly Indonesia) for hundreds of years. Unlike tofu, tempeh is actually mildly flavorful on its own and we combine tempeh’s faintly nutty taste with Cajun seasoning, sweet roasted acorn squash and wilted spinach for a meal that is light, filling and guaranteed to keep you from losing your tempeh!
