Andouille Sausage and Rice-Stuffed Peppers

We love andouille sausage at AHP. But if only there was a way to brown it up, toss with sweet onions, fluffy rice and tomato sauce before stuffing it into tender bell peppers and roasted until the tops becomes crisp and the inside bubbly! If only there was a way of completing the mouth-watering ensemble with sautéed Tuscan kale. If only. What’s a person to do?
