
Sheet Pan Maple Dijon Glazed Vegetables with Mahi Mahi
I love a simple sheet pan meal for busy weeknights and this one is one of my favorites. Roasted sweet potato and brussels sprouts tossed in a maple syrup dijon mustard glaze and roasted alongside tasty mahi on the table in less than 30 minutes with minimal cleanup. If you want this meal to come together even quicker you can roast the veggies ahead of time and then just toss on a sheet pan with the fish to roast / warm through! Cook this recipe with me!
