Salmon Sushi Roll In A Bowl

This might just be my latest mealtime obsession and it's a whole lot easier than rolling sushi. I can't get enough of the combo of sticky sushi rice topped with juicy sriracha soy salmon, crunchy cucumber and slivers of salty nori. I like to make these bowls as a meal prep and just keep each component separate until it's time to serve.
