
Shrimp Spring Roll in a Bowl
I love spring rolls but sometimes I don't feel like putting in the effort to make them so this is my favorite way to enjoy all of the flavors with half the effort. The combination of rice noodles, shrimp, bell pepper, cucumber, and carrots are smothered in a tangy peanut sauce and finished with fresh cilantro and lime juice for a light and fresh summery meal.
