Roasted Vegetable Lentil Pasta with Basil and Pine Nuts

Lentil pasta is such a great vegetarian protein and a go-to in my kitchen. For this version, I take roasted zucchini, eggplant and red lentil penne and toss them in a sun-dried tomato sauce. I then finish the dish off with sweet basil and toasty pine nuts for a quick and easy weeknight meal that packs a nutrition punch!
