
Chicken Cacciatore with Spaghetti Squash
“Cacciatore” means "hunter" in Italian. The term “alla cacciatore” refers to a meal prepared "hunter-style" with onions, herbs, usually tomatoes, often bell peppers and sometimes wine. For our version, we take chicken thighs, brown them and then stew them in a sauce of garlic, crushed tomatoes and thyme until the meat is falling-off-the-bone tender! Served atop strands of spaghetti squash and you have a fantastic meal.
