Mediterranean Sheet Pan Shrimp with Rice

We love a good sheet pan supper for those nights when you need easy clean-up. Bell pepper, zucchini and onion are roasted with herbs de Provence until tender and then the shrimp, kalamata olives and artichokes roast alongside the veggies until everything is cooked through. Served atop fluffy basmati rice and finished with crumbled feta and you have a simple and savory supper.
