Cauliflower "Potato" Salad

Is it really summertime without potato salad on the menu? And for low carb days, this recipe is the perfect alternative to traditional potato salad. Tender cauliflower is tossed with crunchy celery and sweet shallot and then a mayo/mustard dressing with plenty of black pepper to create a low-carb alternative that is as good as the original.
