Quinoa Apple and Spinach Salad with Hazelnuts

Something about fall makes us think of foraging. Our minds wander to leaf-lined roads and paths with small animals busily burrowing and dutifully digging up any tasty morsels they can find before the winter kicks in. And if we were to forage ourselves, we like to think we’d be in the hunt for nuts, fruits and berries and after rooting out some apple, hazelnuts and cranberries, we’d then realize that we’re human and run inside, combine those ingredients with quinoa, spinach and lemon and create the perfect fall salad!
