Andouille Sausage Baked Dirty Rice with Collards

Dirty rice is a traditional Cajun and Creole dish made from white rice which gets a "dirty" color from being cooked with small pieces of chicken liver or giblets, green bell pepper, celery, onion, and a generous amount of cayenne and black pepper. A fresh take on the classic, our version utilizes Whole Foods house-made andouille sausage, lemony thyme and tender onion as the base for our rice with vinegary collard greens rounding out the ensemble for a southern-style meal that you'll make again and again.
