Peanut Tempeh with Broccoli and Cilantro-Lime Rice

Although it may be unfamiliar to most western diners, tempeh is a vegetarian soy food that has been eaten in Asia (particularly Indonesia) for hundreds of years. Unlike tofu, tempeh is actually mildly flavorful on its own and we combine tempeh’s faintly nutty taste with peanut butter, crispy veggies and lime-cilantro rice for a quick weeknight meal that will infuse your kitchen with the smells and flavors of Southeast Asia!
