Our paleo take on the traditional Latin American version of paella, we take bell pepper and onion and sauté until fragrant before stirring in cauliflower rice and a Cuban spice blend. We then top our infused rice with crispy, bone-in chicken thighs and finish with fresh cilantro for a dish packed with Latin personality and flavor!
