Dirty rice is a traditional Cajun and Creole dish made from white rice which gets a "dirty" color from being cooked with small pieces of chicken liver or giblets, green bell pepper, celery, onion, and a generous amount of cayenne and black pepper. A fresh take on the classic, our version utilizes Whole Foods house-made andouille sausage and cooks it up with a combo of bell pepper and green onion. All tossed with cauliflower rice and topped off with pan-seared pork chops, this version might just be better than the original!
