
Smashed Beets with Quinoa Salad and Parsley Pistou
Traditionally pistou, or pistou sauce, is a Provençal cold sauce made from cloves of garlic, fresh basil and olive oil. It is somewhat similar to traditional pesto, although it lacks pine nuts. Our version is simplified by combining lemon, finely chopped parsley and olive oil to add a bright pop of flavor to the finished dish of crispy beets, creamy goat cheese, fluffy quinoa and peppery arugula.
