Split Chicken with Roasted Carrots and Gremolata

Gremolata or gremolada is a chopped herb condiment classically made of lemon zest, garlic and parsley. It is a traditional accompaniment to the Milanese braised veal shank dish, ossobuco alla milanese. For our version, we take lemon, garlic and parsley and then add crostini for a nice crunch! We then serve it over roasted carrots and gorgeous pan-roasted split chicken breasts for a rustic yet elegant treat!
