
Baingan Bharta
A South Asian dish resembling baba ghanoush, baingan bharta is a part of the national cuisines of India, Pakistan and Bangladesh. It is primarily a vegetarian dish that is prepared by mashing eggplant (baingan) that is roasted or grilled over charcoal or direct fire, infusing the dish with smoky flavor. The eggplant is then mixed with fresh cilantro, lime juice, spices, jalapeno and tomatoes. Traditionally, the dish is eaten with an Indian flatbread (specifically roti or paratha) and is also served with rice as we do with our version!
