Chicken Thighs with Creamy Garlic Mashed Potatoes

This meal is so incredibly comforting and perfect as the days begin to get shorter and the weather a little colder. We cube and bake the potatoes in the chicken drippings and stock and then smash them to create the simplest and most delicious smashed potatoes. We then top with crispy chicken thighs and wilted baby kale for a simple weeknight meal with minimal clean-up!
