
Bulgarian Feta and Quinoa Stuffed Eggplant
We take eggplant and roast it until it's tender and then stuff it with a savory quinoa, mushroom and Bulgarian feta filling topped with fresh parsley! The longer it sits the better it gets so this dish is excellent prepped in advance and warmed in the oven. Oh and if you haven't tried Bulgarian feta it's tangy, salty and absolutely delish!
