Everyone loves enchiladas and this recipe is a fun take on the classic. We swap out the tortillas for roasted spaghetti squash to keep things gluten free and lower carb. We fill the squash with bell pepper, green onion, black beans and cilantro stewed in enchilada sauce. All topped off with cheese and baked until melty! This one is sure to be a crowd pleaser!
