Description
Have you ever tried to stuff Arizona and New Mexico into a pepper? You might occasionally see large bell peppers but unfortunately, never one large enough to house the two core Southwest states inside. So, after much soul-searching, our solution to our ill-fated conundrum was to stuff our bell peppers with seasoned beef, fluffy quinoa, diced tomatoes and melty pepper jack cheese. Because at the end of the day, all we wanted was the flavor of the Southwest anyway!
